Kokila's Kitchen offers a pure vegetarian cuisine.  We represent dishes as they are authentically made in the state of Gujarat which is located in the West Coast of India, where Gujarati Thali is a specialty.

The whole region of Gujarat is traditionally vegetarian.  The most outstanding peculiarity of Gujarati food is the moderate use of spices and gravy which is water based.  Though the concept of Thali is ages old, it surprisingly meets all the requirements of the modern concept of a healthy Food Pyramid.  The guidelines of a Food Pyramid provide the most balanced and nutritious mix of foods.  A typical Gujarati thali consists of:

1) Whole wheat bread (Roti, also known as Rotali, Chapati, or Fulka) which provides fiber.

2) Two Vegetables (excellent source of vitamins)

3) Daal (such as Lentils, Toor, Masoor, Urad, and Mung) which provides readily digestible and easy to assimilate vegetable proteins.  Legumes are regarded as a better substitute for meat or animal protein.  Protein from animal sources invariably contain traces of hormones, which could react adversely with the human hormone system, leading to many abnormalities. Protein from legumes is purely vegetarian in nature and free from hormones.

4) At Kokila's Kitchen, we always provide one dish of legumes.  Our popular dish of legumes is Mixed Legumes consisting of 3 to 5 different kinds of legumes in water based gravy.

5) One Farsan (nearest equivalent would be appetizer).  There are countless farsan such as pakora, Samosa, Kachori (deep fried), Khaman Dokla (steam cooked), Papad, also known as Papadam (which could be deep fried or roasted).  Interestingly, the American Heart Association recommended in one of its healthy food publications, that Pakoras and Samosa, both deep fried, should be replaced with roasted Papad or Papadam.  At Kokila's Kitchen, we offer unlimited quantities of roasted papad in our lunch and dinner buffets.

6) One Mistan (dessert). Commonly, most of the mistans are made with dairy products. However, for our Vegan guests, we always have non-dairy desserts.  We most cordially invite our vegan guests to ask for non-dairy dessert.

7) We serve Basmati rice as plain rice or Pulav or Biryani to meet the requirement of carbohydrate.  Basmati rice is the only quality of rice which is aromatic and is one of the most expensive varieties.  It is interesting to note that is variety of rice is now grown in the USA and is known as Texmati.  Other varieties of rice that we offer are Tamarind Rice & Lemon Rice.

8) Dairy product preparation such as Raita or Kheer (Rice Pudding).

Thus, Gujarati Thali covers all the major groups within the Food Pyramid:

The Gujarati Thali meets all the requirements of a wholesome, nutritionally balanced diet.
